MEXICAN CHICKEN 
2 cans boned chicken
1 lg. onion
1/2 c. Velveeta, grated
1 bag taco or nacho doritos
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Ro-Tel tomatoes
Garlic, salt and pepper to taste

In large casserole, combine chicken, chopped onion, garlic, salt and pepper. Sprinkle with cheese. Crush 1/2 bag of chips and sprinkle on top.
