PINEAPPLE JIFFY CAKE 
1 (9 oz.) pkg. yellow cake mix
1 (8 oz.) pkg. cream cheese, softened
2 c. milk
1 pkg. vanilla instant pudding
1 (#2 1/2) can crushed pineapple, drained
2 pkgs. non-dairy whipped topping

Bake cake as directed on the box, except use milk instead of water. Bake in greased and floured 9"x13" cake pan for 18 to 20 minutes. This makes a thin layer. Cool. Mix cream cheese and milk, add milk slowly. Add pudding mix and beat 2 minutes. Spread on cake. Arrange drained pineapple over pudding carefully. Then spread with whipped topping. Sprinkle with coconut or chopped nuts.
