BLUEBERRY MUFFINS 
1 1/2 c. flour
1 c. sugar
1 tsp. salt (opt.)
2 tsp. baking powder
1/4 c. liquid shortening
1/2 c. milk
1 egg or egg substitute
1 c. blueberries

Blend dry ingredients; set aside. Mix shortening, milk and egg. Add dry ingredients; mix. Stir in blueberries. Makes 1 dozen muffins. Bake at 400 degrees for 15 to 20 minutes.
