PERFECT POTATO SALAD 
3 lb. med. red potatoes, cut in 1/4's
1 tsp. sugar
1 tsp. vinegar
1/2 c. celery, sliced
1/3 c. onions, finely chopped
1 tsp. salt
1 tsp. celery seed
1/4 c. sweet pickles, chopped
3/4 c. mayonnaise or salad dressing
2 hard-cooked eggs, sliced

In a covered pan, cook potatoes in enough boiling salted water to cover, approximately 20-25 minutes or until almost tender. Drain. Sprinkle potatoes with sugar and vinegar while still warm. Add sliced celery, onions, sweet pickles, salt and celery seed. Stir mixture to combine. Add mayonnaise, fold into potato mixture. Carefully fold in the sliced eggs. Cover and chill thoroughly. Serves 4-6.
