CHICKEN MOZZARELLA 
1 tsp. vegetable oil
2/3 c. Bisquick baking mix
2 tbsp. grated Parmesan cheese
2 tsp. Italian seasoning
1 tsp. paprika
1/4 tsp. pepper
6 lg. chicken breast halves, boned and skinned
2/3 c. chili sauce
3/4 c. shredded Mozzarella cheese

Preheat oven to 425 degrees.

Brush bottom of 13 x 9 x 2" pan with oil. Mix Bisquick, Parmesan cheese, Italian seasoning, paprika, and pepper; coat chicken; arrange in pan. Bake 30 minutes. Turn chicken; spread chicken with chili sauce. Sprinkle with Mozzarella cheese. Bake until melted, 5-10 minutes. Sprinkle with snipped parsley if desired. 6 servings.
