LEMON HONEY COOKIES 
2 c. flour, sifted
1 tsp. baking soda
Pinch of salt
1/2 tsp. dried ground thyme
2 eggs, slightly beaten
Finely grated rind of a 1/2 lemon
2 tbsp. honey

Preheat oven to 350 degrees. Grease baking sheets. Sift the dry ingredients together. Next, beat in the eggs, lemon rind and honey, mixing well. Roll out thinly and cut into rounds or fancy shapes. Bake for 15 minutes. Yield: 2 dozen.
