MUSHROOM SANDWICHES 
1/2 lb. raw mushrooms
1 tbsp. butter
1 1/2 tbsp. flour
1 1/2 tbsp. butter
1/2 c. mushroom broth & milk (see below)
1/2 tsp. salt
Dash pepper
1 loaf very thinly sliced white bread
Butter for bread

Chop mushrooms in food processor and saute in 1 tablespoon butter. Pour liquid into 1/2 cup and add milk to reach top of cup. Remove mushrooms from pan. Melt the 1 1/2 tablespoon butter, add flour and broth mixture. Cook until thick. Add mushrooms, salt and pepper. Cut crusts from bread. Butter inside of each slice. Spread mushroom mixture thinly on 1/2 the slices and top with rest of slices. Broil 3" from the broiler until brown (about 3 minutes on each side). Cut in half and serve hot. Makes about 32.
