PINEAPPLE RICE 
1 can pineapple tidbits in juice, undrained
1 1/2 c. uncooked instant rice
1/2 c. water
1/4 tsp. salt (optional)
1/4 tsp. ground nutmeg
1/4 c. chopped fresh parsley

Bring all ingredients (except parsley) to boil, reduce heat, cover and simmer about 5 minutes or until rice is tender. Stir in parsley. This is very good with grilled chicken. Serves 4.
