DIET PINEAPPLE RICE PUDDING 
2 c. cooked rice
2 c. non fat (liquid) milk
4 eggs
1 c. canned, crushed pineapple, no sugar added
2 tsp. vanilla
Artificial sweetener = 1/4 c. sugar
1 1/4 tsp. cinnamon

Combine rice and milk in a saucepan. Simmer 15 minutes. Beat eggs and combine with pineapple, vanilla, sweetener and cinnamon. Gradually combine with milk and rice mixture. Pour into a casserole. Bake at 350 degrees for 30 minutes. Makes 4 servings.
