LEMON PINEAPPLE RICE 
2 (3 oz.) boxes lemon Jell-O
1/2 c. sugar
1 (16 oz.) can crushed pineapple
2 c. boiling water
1/2 c. whipped cream
1 c. cooked rice

Prepare Jell-O and sugar with 2 cups boiling water. Chill until slightly firm. Whip Jell-O. Add drained pineapple and rice. Sweeten to taste. Fold in whipped cream. Chill.
