WINTER SALAD (JENNY CRAIG) 
4 c. shredded spinach
2 c. finely shredded cabbage
3 c. mandarin oranges (juice packed)
2 tbsp. chopped walnuts

Toss spinach, cabbage, and mandarin oranges with raspberry vinaigrette (recipe follows). Sprinkle each with 1 teaspoon chopped walnuts. Makes 6 servings, 1 cup each. (1 serving = 1 vegetable, 1 fruit and 1/2 fat exchange.)

RASPBERRY VINAIGRETTE:

1/2 c. raspberry vinegar
1/4 tsp. pepper
4 tsp. sugar
2 garlic cloves, finely chopped
2 tsp. Worcestershire sauce
1 tbsp. Dijon mustard
2 tbsp. water
1 tbsp. vegetable oil

Combine all ingredients. Mix well and refrigerate. 2 tablespoons = free exchange.
