CASHEW CHICKEN CASSEROLE 
2 1/2 c. boned chicken
2 c. chopped celery
1/2 c. green onion
1/2 lb. cashew nuts
1 lg. can mushrooms or 2 c. fresh, chopped
2 cans Cream of Mushroom soup
1/2 can chicken broth
2 cans chow mein noodles
1 can sliced water chestnuts, (optional)
1 can sliced bamboo shoots, (optional)
Pimento (for color), (optional)

Mix ingredient in large bowl. Place in 9 x 13 inch baking pan. Top with sprinkle of cashews or paprika. Bake at 350 degrees for 30 to 40 minutes. Yields 8 servings.
