APPLESAUCE-RAISIN CAKE 
1 box raisins
1 c. shortening
1 tsp. salt
1 c. applesauce
2 tsp. instant coffee
1 tsp. vanilla
2 c. sugar
1 tbsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
4 1/2 c. flour
1 c. chopped nuts

Gently cook raisins in 2 cups water in a tightly covered pan for 15 minutes. Remove from heat and add the next 6 ingredients, stirring to mix each one in. Measure the flour and then sift together the soda and spices. Gradually add to the above mixture, stirring mixture well. Add nuts. Save some nice pieces to decorate top. Bake at 350 degrees for 1 hour 15 minutes. Use tube pan greased and floured.
