CAROB PUDDING 
2 c. soy milk (Soyameal or Soyagen)
1/4 c. pecans or black walnuts
1/4 c. almonds or cashews
1/2 c. honey
1/2 c. cornstarch
3 tbsp. butter
2 tbsp. carob powder
1 tsp. Roma
1/2 tsp. vanilla
1/4 tsp. salt

Whiz all ingredients in blender until smooth. Pour into cups and chill. Serve garnished with additional chopped nuts. Delicious as a cake topping. Yields 4-6 servings. Store in refrigerator. Serve hot or cold.
