BASIC LAMB ROAST 
Rub leg of lamb with coarse salt, garlic salt or lemon pepper. Place rack in uncovered roasting pan. Place in oven and roast at 325 degrees until desired doneness (from rare to well done). You may also place on microwavable rack in glass dish and roast in microwave at medium powder (50%) for 20 minutes. Rotate lamb once and continue cooking until correct doneness. Use a meat thermometer to determine doneness in either method.

Rare 140 to 150 degrees
Medium 160 to 165 degrees
Well 179 to 180 degrees
40 to 43 minutes
44 to 47 minutes
48 to 53 minutes

No matter what degree of doneness you like allow a roast to stand in a warm place for 15 minutes after removal from the oven to give it a chance to firm up. This makes the slicing much easier.

Since microwave ovens vary in power, you may need to adjust your cooking time.
