6 hard-boiled eggs
1/4 c. mayonnaise
1 tbsp. Dijon mustard
1 tsp. tarragon vinegar
1 1/2 tsp. dried tarragon
1 1/2 tsp. minced red onions

Halve the eggs and mix yolks with mayonnaise, mustard, vinegar. Salt and pepper to taste. Sprinkle inside of each white cavity with tarragon. fill with yolk mixture and garnish with onion and tarragon flakes.
