CARROTS AND ZUCCHINI | |
4 med. carrots, scraped & cut into thin strips 3 tbsp. butter, melted 1/8 tsp. fresh ground pepper 2 tbsp. chopped parsley 3 med. zucchini, sliced 1/4" thick Arrange carrots on a steaming rack and place over boiling water; cover and steam 1/2 minute. Add zucchini to steaming rack and steam an additional 3 to 4 minutes. Place vegetables in a bowl; add remaining ingredients (tossing gently). Serve immediately. Yield: 6 servings. |
