MOCK CHEESECAKE 
2 1/2 c. graham cracker crumbs
1/2 c. butter
1/4 c. sugar
3 beaten egg yolks
1 can (1 1/3 c.) sweetened condensed milk
1 c. applesauce
3-4 tbsp. lemon juice
1 1/2 tsp. grated lemon peel
3 stiffly beaten egg whites

Combine 2 cups graham cracker crumbs, butter and sugar. Mix well. Press on bottom and sides of a 8 x 10 inch baking dish. I used a 6 x 10 inch. Combine egg yolks, milk, applesauce, lemon juice and peel; mix well. Fold in stiffly beaten egg whites. Pour into crumb crust. Sprinkle with remaining crumbs. Bake at 325 degrees. Serves 10-12.
