BRAN MUFFINS 
1 1/4 c. bran cereal, with raisins, apples & almonds
1 c. buttermilk
1 egg, slightly beaten
1/4 c. vegetable oil
1 1/4 c. all purpose flour
1/4 tsp. salt
1/2 c. sugar

Combine cereal and buttermilk in a large bowl; let stand 5 minutes. Add egg and oil; stir well. Combine remaining ingredients and add to cereal mixture. Stir just until moistened. Spoon into greased muffin pans, filling 3/4 full. Bake at 400 degrees for 18 minutes. Serve with honey nut butter. Serves 12.
