MOM'S HOT GERMAN POTATO SALAD 
6 slices of bacon
1 onion
1 bud of fresh garlic
1 tbsp. flour
1 1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. sugar, adjust to your own taste
1/8 c. vinegar, adjust to your own taste
1 tbsp. parsley
1/2 c. water
4 c. sliced new potatoes

Scrub about 6 new potatoes, leave the skins on and slice into 1/2 inch slices. Boil until almost tender. Do not over cook. Drain and set aside.

Fry bacon. Remove from pan and saute onion and garlic in bacon grease. Add remaining ingredients, including crumbled bacon. Cook about 5 minutes to thicken. Pour this mixture over the cooked potatoes and keep warm in a double boiler until time to serve. For best flavor, heat at least 30 minutes before serving. Serve hot!
