This makes a delicious spaghetti sauce or chili recipe to garnish wieners or hamburgers. 6 slices bacon 1 lb. ground beef 1/4 c. chopped onion 1/2 c. chopped celery 1 or 2 cloves of garlic, to taste 1 sm. can sliced mushrooms 3 to 4 c. canned tomatoes 1 can tomato paste 2 tsp. salt 1/4 tsp. pepper 1 to 2 leaves - bay leaf 1/2 tsp. paprika 1/4 tsp. cayenne pepper Brown bacon, drain on paper towel. To bacon fat add ground beef, onions, celery and garlic. Cook moderately fast to brown. Stir frequently. Stir in mushrooms. Add tomatoes, tomato paste, seasoning and chipped up bacon. Simmer over low heat approximately 2 hours. Stir frequently. The flavor seems improved if the sauce is prepared 1 or 2 days prior to its use. Makes enough for 6 to 8 servings when used as spaghetti sauce. |
