BEEF COOKIES 
2 c. brown sugar
3/4 c. shortening
2 eggs
1/3 c. buttermilk
2 tsp. vanilla
2 3/4 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. crushed potato chips
2 c. cooked roast beef (ground finely)

Cream together brown sugar and shortening. Add eggs, beating well. Blend in buttermilk and vanilla. Sift together flour, soda and salt; combine with creamed mixture. Stir in potato chips and beef. Drop by teaspoons on cookie sheets that have been lined with waxed paper. Bake in 400 degree oven for 10 minutes or until brown.
