WATERMELON-BLUEBERRY SALAD | |
2 c. watermelon balls 1 c. honeydew melon chunks 1 c. blueberries 3 tbsp. honey 2 tbsp. lime juice 1/2 c. sour cream 4 lettuce cups Combine watermelon balls, honeydew and blueberries in deep bowl. Combine honey and lime juice; pour over fruit. Cover with clear, plastic wrap and marinate 2 to 3 hours in refrigerator, stirring several times. Drain fruit, reserving 2 tablespoons liquid. Combine sour cream and the reserved liquid, stirring to blend. Pile fruit onto lettuce cups. Top with sour cream dressing and serve immediately. |
