OLD ED'S ITALIAN BEEF | |
3 lb. rump roast or roast like it, if tied, untie & spread out 2 (14 oz.) canned beef broth 3 potatoes, peeled & cut 3 carrots, peeled & cut 2 sm. onions, peeled & sliced 1 pkg. French onion soup Roast beef in hot oven (400 degrees) until brown (about 1 hour). Add beef broth. Reduce heat to 325 degrees and roast until pink in center. Put in potatoes, carrots, onion and roast for 1 hour. Slice thin and put back in roaster and French onion soup mix. Serve as is or in Kaiser Rolls on Hoagie Buns as sandwiches. Gravy can be made out of the broth. |
