OLD - FASHIONED BEEF VEGETABLE
SOUP
 
1 lb. (450 g) diced beef
2 tbsp. (30 ml) barley
8 c. (2 L) beef stock
3 tbsp. (45 ml) butter
1 onion, diced
2 carrots, sliced
3 celery stalks, diced
2 c. (500 ml) tomatoes, seeded & chopped
1 tsp. (5 ml) salt
1/2 tsp. (3 ml) pepper
1 tsp. (5 ml) basil
3 tbsp. (45 ml) soya sauce
1 tbsp. (15 ml) Worcestershire sauce
1 tsp. (5 ml) paprika

Gently boil the beef and barley in the stock for 30 minutes. Remove any scum that floats at the top. In a saucepan, melt the butter and saute the vegetables.

Add the tomatoes and seasonings. Pour this mixture into the stock and simmer 1/2 hour longer. 8 servings.
