CHICKEN POT PIE 
2 tbsp. oil
1 tbsp. flour
Milk
Salt and pepper
1 tbsp. chopped onion
1 (5 oz.) can peas
1 med. carrot, diced
1/2 stalk celery, chopped
1 c. cooked chicken, chopped
1 1/2 c. chicken broth
6 biscuits, homemade or canned

Mix oil and flour, add milk for thin cream sauce. Salt and pepper to taste. Place peas, carrots, onions and celery in casserole. Add layer of chicken. Pour in cream sauce and broth. Top with biscuits and bake 1 hour at 300 degrees. Serves 4. Turkey can be substituted for chicken.
