SALSA 
3 green peppers
3 carrots
3 onions
3 jalapenos (hot) peppers (be sure to take out seeds)
1 tsp. cumin
6 tbsp. sugar
4 tbsp. salt
1 tbsp. black pepper
1 1/2 c. vinegar

Process the first 4 ingredients in food processor, then add together the rest of the ingredients.

In the meantime, scald, peel and cut in chunks 20 tomatoes. Add tomatoes to other ingredients and bring to boil and cook 45 minutes to 1 hour. Add 3 cans of tomato paste (12 ounce cans). Mix well. Cook about 10 to 15 minutes more. Pour in jars. Place jars in canner and process for 20 minutes.
