MARINATED VEGETABLES 
2 c. cauliflower
2 c. broccoli
2 c. sliced carrots
1 sliced zucchini
1 sliced cucumber
1/2 c. chopped red pepper
1/2 c. chopped green pepper
1/2 c. sliced celery
1/2 c. sliced black olives
8 cherry tomatoes, halved
1 c. mushrooms, halved

DRESSING:

1 1/4 c. vegetable oil
2/3 c. vinegar
1/2 c. sugar
2 cloves garlic, crushed
1 tsp. salt
1 tsp. pepper

Combine first 9 ingredients in a bowl. Pour dressing over vegetables and toss gently. Cover and chill at least 12 hours. Add tomatoes and mushrooms just before serving.
