JONES COCONUT CAKE 
2/3 c. soft butter
1 3/4 c. sugar
2 eggs
1 1/2 tsp. vanilla
3 c. sifted Softasilk flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. milk

Heat oven to 350 degrees. Grease and flour two layer pans. Cream butter, sugar, eggs and vanilla together until fluffy. Beat 5 minutes, high speed on mixer or by hand. Sift together flour, baking powder and salt. Mix in alternately with milk. Use low speed on mixer. Pour into prepared pans. Bake layers 30 to 40 minutes or until cake tests is done. Cool. Frost as desired. Delicious iced with a fluffy white icing and sprinkle with coconut.
