IRISH STEW 
3 lb. stewing beef with bone
4 carrots, quartered
2 parsnips, quartered
2 stalks celery, cut 2 inch pieces
4 turnips, cut 2 inch pieces
2 sweet potatoes, 2 inch pieces
4 sm. red potatoes, quartered
1 med. onion
Snipped parsley
Salt & pepper to taste

In 6 quart pot boil meat, cover with water, do not brown meat. When meat is tender, add vegetables. Cook until veggies are tender. Add water if necessary. Broth will be clear. Serve with hard rolls and butter.
