IRISH OVEN STEW 
2 lbs. beef stewing meat, cut in 1 1/2 inch cubes
2 onions, cut in eighths
3 stalks celery, cut in lg. pieces
4 carrots, quartered
2 c. tomato juice
2 tbsp. quick cooking tapioca
1 tbsp. sugar
1/2 tsp. basil
Salt and pepper to taste
4 potatoes, cut in slices 1/4 inch thick

Combine beef, onion, celery and carrots in a 2 1/2 quart casserole. Combine tomato juice, tapioca, sugar, salt, pepper and basil. Pour over meat and vegetables. Cover and bake in a preheated 300 degree oven for about 2 1/2 hours. Add potatoes and cook 1 hour longer. Stir occasionally and add water, if necessary. Serves 8.
