3 c. apples, diced & set aside
2 sticks butter
2 c. sugar
2 tsp. vanilla
1/2 tsp. baking soda
1 tsp. nutmeg
2 tsp. cinnamon
2 eggs
2 c. flour

Cream butter and sugar. Blend in eggs, one at a time. Sift dry ingredients together and mix into batter along with vanilla. Fold in apples. Bake in 375 degree oven for 45 minutes.
