OATMEAL MACAROONS 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
1 1/2 tsp. vanilla
2 eggs, unbeaten
1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
3 c. Quick Quaker Oats
1/2 c. chopped walnuts

Mix first 5 ingredients and beat thoroughly. Sift together and add flour, soda, salt, and cinnamon; blend thoroughly. Fold in oats and nuts. Drop by teaspoon onto greased baking sheet; flatten if desired. Bake at 350 degrees for 12-15 minutes. Cool on pan 2 minutes, then remove with spatula. Do they love 'em!
