POTATO AND CHEESE PIEROGI 
1 egg
2 c. flour
3/4 c. water

FILLING:

4 or 5 med. potatoes, mashed
1 sm. onion, diced and browned in butter
1/2 lb. yellow American cheese broken up

Mix all ingredients together. Mix egg, flour, and water and form a stiff dough about 16 small balls. Roll until very thin and place about 1 tablespoon of filling in each. Fold over to make a pillow. Boil until dough is done and serve with tomato sauce poured over the top.
