EASY POTATO PIEROGIES 
1 box jumbo macaroni shells
1 box instant potatoes
Milk
Butter
Salt & pepper
3-4 slices yellow American cheese
1 lg. onion, diced

Cook shells until tender, drain and set aside. Prepare instant potatoes according to package directions for 6-8 servings. Add 3-4 slices of American cheese and whip until smooth. Fry onion until golden.

In a separate pan melt 1/4 pound butter. Pour small amount of melted butter on the bottom of baking pan. Stuff shells with potato mixture and place in pan. Drizzle with melted butter and pour over onions. Cover and heat in low oven (300-325 degrees) for 15-20 minutes.
