BEET-PEA SALAD 
2 c. diced or sliced cooked beets
1 c. cooked, fresh peas
1/4 c. no-fat French dressing
Lettuce

Cook vegetables, preparing beets as described. Marinate the beets 20 minutes or overnight in dressing. Combine with peas just before serving. Serve on lettuce leaves. A finely chopped onion makes a nice addition to this dish.
