APPLE CRUMBLE PIE 
Pastry for single crust pie
1 c. sugar
2 tbsp. all-purpose flour
1 tsp. finely shredded lemon peels
6 c. thinly sliced peeled cooking apples
3 tbsp. lemon juice
1/2 c. all purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/8 tsp. ground mace
1/4 c. butter

Prepare and roll out pastry; line a 9" pie plate. Trim pastry to 1/2" beyond edge. Flute edge; do not prick. In mixing bowl stir together 1/2 cup of sugar, the 2 tablespoons flour and the lemon peel; set aside. Sprinkle apple slices with lemon juice, toss apples with sugar mixture to coat; turn apples into pastry-lined pie plate. Combine the remaining 1/2 cup sugar, the 1/2 cup flour, cinnamon, ginger and mace. Cut in butter until crumbly; sprinkle on the apple slices. To prevent over browning, cover and bake at 375 degrees.
