BAKED STUFFED YELLOW SQUASH 
3 med. summer squash
1 lg. onion, chopped
3 cloves garlic, chopped
3 tbsp. butter
1/2 lb. sausage
3 c. fresh bread crumbs, divided
3/4 c. Parmesan cheese, divided
3 tbsp. chopped parsley
4 tbsp. butter

Cook squash with 4 tablespoons water in microwave on high for 7 minutes. Cool.

Saute onion, garlic in 3 tablespoons butter. Remove from pan. Saute sausage until brown. Combine sausage, onion, garlic with 1 1/2 cups bread crumbs, 1/2 cup Parmesan cheese and parsley.

Cut squash in half and scoop out leaving 1/2 inch shell. Let scooped out squash drain for a few minutes. Then add to sausage mixture. Cover with topping made of 4 tablespoons melted butter, 1 1/2 cups bread crumbs and 1/4 cup Parmesan cheese. Bake in greased pan, covered for 30 minutes at 350 degrees. Then uncover and bake for another 20 to 25 minutes or until golden brown.

Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
