CHEESE FILLING FOR PASTA OR
MANICOTTI
 
1 lb. Ricotta cheese
2 lg. eggs
1/4 c. chopped fresh parsley or basil
1/3 c. Parmesan cheese
1 tbsp. chopped fresh thyme, basil, oregano, or a combination of these
1/2 tsp. pepper

In a large bowl mix all ingredients together with a wooden spoon until well blended. Cook manicotti, rinse in cool water. Stuff manicotti, lay in greased baking dish, cover with sauce and bake at 350 degrees for 25-30 minutes.
