CLASSIC APPLE FRITTERS 
4-6 tart apples
1 c. sifted all-purpose flour
1 tsp. baking powder
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 egg
1/2 c. milk
1 tbsp. vegetable oil
1 tbsp. lemon juice
1/2 c. flaked coconut

Peel and core the apples and slice them 1/4 inch thick. Mix and sift the flour, baking powder, sugar, salt and nutmeg. Beat the egg slightly, then beat in the milk and vegetable oil and add to the flour mixture. Stir in the lemon juice and coconut.

Dip the apple slices in the batter. Fry them in hot vegetable oil about 1/4 inch deep until golden brown on both sides. Drain and serve with maple syrup. Makes 6-8 servings.
