APPLE APRICOT TART 
2 c. all purpose flour
2/3 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt (optional)
1/2 c. butter
1 lg. egg
1 tbsp. lemon juice
1 lg. egg yolk
1 c. apricot jam
1 lg. apple, peeled and sliced
1/4 c. almonds, sliced
1/4 c. water
1 tsp. brown sugar

In a food processor or bowl, mix flour, sugar, baking powder, and salt. Add butter and whirl or rub with your fingers until mealy. Add egg and egg yolk; whirl or mix with a fork until evenly moistened. Gather dough into a ball. Press 3/4 of it over bottom and 3/4 of way up side of a 10 to 12 inch tart pan with a removable bottom. Arrange sliced apples over crust, sprinkle with lemon juice and brown sugar. Mix jam and water; spread over apples. Sprinkle sliced almonds over apples. Roll remaining dough, add flour if necessary, into thin strips. Arrange strips in crisscross pattern over tart. Bake in a 350 degree oven until crust is deep golden brown, about 40 to 45 minutes. Let cool and then remove pan sides. Serve tart warm. Makes 8 servings.
