APPLE CREAM TART 
1 1/2 c. flour
3 tbsp. sugar
1/4 tsp. salt
6 tbsp. butter

FILLING:

4 or 5 peeled, sliced apples
1/2 to 3/4 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg

TOPPING:

2 egg yolks
1 c. heavy cream

Combine flour, sugar, salt and butter until mixture is like cornmeal. Press into the bottom and up the sides of a 9 inch springform pan.

Fill the crust with apples and mix together the sugar and spices and sprinkle over the apples. Bake in a 400 degree oven for 15 minutes.

Combine the egg yolks and cream and pour over the apples. Bake 30 minutes more or until apples are tender. Cool on rack. Serves 10.
