PEKING DUCK 
Rinse a duck and pat dry. Mix 2 tablespoons of soy sauce and 1 tablespoon of salad oil. Rub inside and outside of duck. Place duck, breast side up on a rack in a roasting pan. Prick the skin. Bake at 275 degrees for 3 hours. Drain fat. Brush on sauce made of 1/2 cup plum jelly, beaten with fork. Add 1 1/2 teaspoon each of sugar and vinegar. Add 1/4 cup chutney. Cook for approximately 10 more minutes being careful not to char the duck. Plan on 1/2 duck per person.
