PICKLED GREEN BEANS 
4 lbs. green snap beans
6 c. vinegar
4 c. water
4 c. sugar
3 tbsp. mustard seed
4 tsp. salt
4 tsp. peppercorns
3 cloves garlic, cut in sm. pieces

Combine all ingredients except the beans. Boil together for 10 minutes. Strain into large kettle and keep hot. Wash beans and clip ends. Cover with boiling water and boil for about 10 minutes or until slightly underdone.

Drain beans well and pour hot vinegar mixture over them at once. Pack 8 clean, hot pint jars with beans. Fill to within 1/2 inch of top of jars with the hot spiced syrup. Seal the jars at once. To serve, drain and arrange beans on a relish dish.
