CHEESE BLINTZES 
LEAVES:

1 c. milk
1/2 c. water
2 eggs
1/4 tsp. salt
1 c. flour

FILLING:

1 lb. farmer's cheese
1 egg
1/4 tsp. white pepper
2 tbsp. sour cream

Put milk, water, eggs, and salt into bowl. Add flour, mix with fork. Mix at medium speed with electric mixer until thoroughly blended. Meanwhile, prepare cheese filling. Mix cheese, eggs and pepper in large bowl. If dry, add sour cream. Set aside.

Using a 9-inch frying pan (non-stick Teflon), heat pan, pour 1/2 cup of leaves mixture into pan. Cook over medium heat until edges begin to curl. Turn out on board. Place about 2 tablespoons of cheese mixture in middle. Fold over sides. Roll up.

Continue process until all ingredients are depleted. Fry in butter, until both sides are golden brown. Sprinkle with sugar (optional) and serve with sour cream.
