ZUCCHINI CASSEROLE BAKE 
4 eggs
1 lg. onion, chopped
1/2 c. grated Parmesan cheese
1/2 c. vegetable oil
1 c. buttermilk biscuit mix or flour
3 c. unpeeled grated zucchini
1/2 tsp. diced parsley flakes
Salt and pepper to taste

In a large bowl beat eggs, add onions, cheese, oil and biscuit mix or flour. Mix well. Add zucchini, parsley and salt and pepper. Mix thoroughly. Grease a 10 inch pie plate or casserole dish. Pour mixture and bake at 350 degrees for 30 to 45 minutes or until golden. Serves 6.
