NANNY MAE'S FRESH APPLE CAKE 
1 c. pecans, chopped
2 c. sugar
2 c. flour
1/2 c. oil
4 med. size cooking apples
2 eggs
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

Peel, core, and chop apples. Place apples into large mixing bowl. Break eggs into bowl over apples. Add sugar, oil, nuts; stir well. Add dry ingredients to apple mixture. Pour into greased and floured 10 inch tube or bundt pan. Bake at 350 degrees for 45 minutes. (May add orange peel, vanilla, dates, or raisins.) Yield: 8 to 10 servings.
