CARROT CASSEROLE 
2 c. diced, cooked carrots
3/4 c. mayonnaise
1/4 c. onion, grated
1/4 c. horseradish
Crushed Ritz crackers

Combine all ingredients. Place in buttered 1-quart casserole and cover with crumbs. Bake at 350 degrees for 30 minutes. Serves 4.
