MADELAINE'S CURRY 
1 1/2 lb. meat (chicken, pork, lamb)
2 onions, chopped
1 apple, chopped
2 c. broth or stock
Pepper & salt to taste
1 tbsp. curry powder
Oil

Brown cut up meat in small amount of oil. Add chopped onions and chopped apple, broth or stock, salt and pepper to taste and curry powder (more according to taste). Simmer about 1 hour to blend flavors. Serve over rice accompanied by side dishes of sauteed bananas, peanuts, hard boiled eggs sliced or cubed, sliced cucumber and sour cream. Also optional raisins and coconut and chutney.

May also be made with precooked meat. Just make a rich sauce with meat stock and flour enough to thicken. Flavor with salt, pepper and curry. Then add cut up meat and simmer for at least 1/2 hour. Serve as above. Great recipe for leftovers.
