OLD SOUTH CUCUMBER LIME PICKLES | |
7 lb. cucumbers, sliced 2 c. lime dissolved in 2 gal. water Soak cucumbers 24 hours in lime water. Rinse 3 different times in cool water. Rinse 3 different times in cool water. Soak 3 hours in ice and water. Drain and pour following syrup over the cucumbers. SYRUP: 2 qt. good vinegar 4 1/2 lb. sugar 1 tbsp. salt Pickling spice to taste Let this set overnight. Then boil mixture and cucumbers for 35 minutes. Pack cucumbers in sterilized jars and seal. Process in hot water bath for 5 minutes. |
